I had a great weekend

I had the best weekend in Wichita. The weather and play was good. Josh had a small but good role in it. It was Much Ado About Nothing so it was difficult to understand. I enjoy Shakespeare though a lot.

Josh is trying out for what will be the last play his school puts on it will be Seven Brides for Seven Brothers. It's one of my mom's and my favorite musicals ever. Keep your fingers crossed that he will get one of the roles he wants.

Soup recipe

Taco Soup

1 onion, chopped
1 16-oz can chili beans,with liquid
1 15-oz can whole kernel corn,with liquid
1 8-oz can tomato sauce
2 cups water
1 14.5-oz cans peeled and diced tomatoes
1 4-oz can siced green chile peppers (adjust to taste)
1 1.25-oz package of taco seasoning mix

Garnishes such as corn chips,shredded cheese and sour cream.

In a medium skillet, cook the ground beef until browned over medium heat. Drain and set aside.

Place the ground beef,onion,chili beans,corn,tomato sauce,water,diced tomaoes,green chilie peppers and taco seasoning mix in a slow cooker. Mix to blend. Cook on low for eight hours.

Top bowls with corn chips,shredded cheddar and sour cream. Makes eight servings.

Another Soup recipe

Fiesta Chicken Tortilla Soup

Serves 11 (1 cup each).

All you need:
3 cloves garlic, minced
1 small onion, chopped
1 tbsp Hy-Vee canola oil
4 (14.5 ounce each) cans Hy-Vee reduced-sodium chicken broth
2 cups cooked, shredded chicken breast
1 (15.5 ounce) can Hy-Vee whole kernel corn, drained
1 (15 ounce) can Hy-Vee black beans, rinsed and drained
1 (14.5 ounce) can Hy-Vee diced tomatoes with green chilies, drained
1 (1.25 ounce) package Hy-Vee taco seasoning mix
1 (1 ounce) package ranch seasoning mix
6 Hy-Vee corn tortillas
Hy-Vee salt, to taste
Hy-Vee shredded cheddar cheese, optional

All you do:
In a large stock pot, sauté garlic and onion in oil 5 to 7 minutes or until tender.
Add broth, shredded chicken, corn, beans, tomatoes and seasoning packets. Bring to boil, stirring frequently. Reduce heat, cover, and simmer for one hour.
Meanwhile, cut corn tortillas into 1/4-inch strips. Place on large baking sheet and spray with cooking spray and sprinkle with salt to taste. Bake in 400-degree oven for about 8 to 10 minutes or until golden brown and crisp.
Serve soup with tortilla strips and cheese, if desired.
